Arepa with Carne Picada & Chimichurri
Ingredients
- 2 pounds of shredded stake (also known as “carne picada”)
- 1 small bunch of parsley
- ½ teaspoon of oregano
- 3 garlic cloves
- ½ shopped onion
- ½ teaspoon of chili powder
- 2½ tablespoons of olive oil
- 2 teaspoons of red wine vinegar
- Lemon, salt and garlic powder to taste
Directions
To make the chimichurri, mix all the ingredients in a food processor to a saucy consistency. Season the stake with salt and garlig powder to taste. Heat a griddle or frying pan with oil and cook the carne picada for 2 to 3 minutes or until done to your liking. We now take the arepas out of the oven, split them open and stuff them with Carne Picada and Chimichurri Sauce!
