Arepas with Ceviche


Ingredients

  • 2 pounds of salmon
  • ½ chopped red onion
  • ½ chopped yellow pepper
  • 1 bunch of cilantro
  • 1 mango diced
  • The juice of 1 orange
  • The juice of 5 limes
  • Salt and pepper to taste

Directions

Cut the salmon in cubes. In a bowl mix the salmon with the rest of the ingredients and marinate for 20 minutes. Add salt and pepper to taste and the ceviche is done!  Now we take the arepas out of the oven, split them open, and stuff the arepas with ceviche!
