Arepas with Perico


Ingredients

  • 8 eggs
  • 1 chopped onion
  • 4 diced tomatoes
  • 4 tablespoons of oil
  • Salt and pepper to taste

Directions

In a bowl, mix the eggs and add salt and pepper to taste. In a nonstick skillet, add the oil and heat to medium. Then add the onions, tomatoes and cook for about 5 minutes. Add the eggs and combine until you get the consistency of scrambled eggs. Now we take the arepas out of the oven, split them open and stuff with Perico!
