Arepas with Gallo Pinto


Ingredients

  • 2 tablespoons of olive oil
  • 1 cup of white rice already cooked
  • 1 can of black beans
  • ½ chopped onion
  • ¼ chopped red pepper
  • 4 garlic cloves
  • Cilantro, salt and pepper to taste

Directions

In a skillet, add the olive oil and heat to medium. Add the onion, red pepper, and garlic and sauté for 5 to 7 minutes. Add the beans and rice and combine. Season lightly with salt and pepper, garnish with cilantro and the Gallo Pinto is done! Let’s now take the arepas out of the oven and to make it even more Costa Rican add a fried egg, fried plantains, and Salsa Lizano. Mmmm this is Pura Vida!
